Institutional refrigeration has a distinctive failure pattern. Long idle periods followed by sudden full load, which means units that sat through summer with doors closed and power off frequently fail in the first week of service. That is the worst possible time to find out.

Summer commissioning is the answer: coil cleaning, gasket replacement, charge verification and a full temperature calibration in July, before the first meal service in August. Districts that do this have dramatically fewer September emergencies.

Documentation matters more here too. Temperature logs, dated service records and calibration verification are part of the compliance picture for school nutrition programs in a way they are not for a private restaurant, so every visit should leave paper behind.
